Not Just Coffee began as a journey — literally. A journey across Thailand that eventually led us deep into the mountains where coffee is grown.

Natalia

Natalia has a professional background in coffee, working in the coffee industry in Russia. Her experience included tasting, evaluating, and understanding the science behind coffee.

In professional cupping, coffee is evaluated carefully as it cools — analyzing aroma, acidity, sweetness, balance, and body. This scientific approach to tasting became the foundation of the concept behind Not Just Coffee.

Aric

Aric is a web developer and entrepreneur who helped bring the Not Just Coffee project to life.

His background is in building digital systems, websites, and businesses. For this project, he designed and built the website and the digital experience that connects each lot to its story through the QR code reveal.

Since meeting Natalia, he has been learning more and more about coffee — especially the world of specialty drip coffee.

Over time he has become a true enthusiast of the ritual itself: slowing down, brewing carefully, and experiencing how different coffees express themselves in the cup.

Today he is particularly fond of drip coffee and the unique profiles coming from the mountains of Northern Thailand — especially the lots we discovered in Pai.


The Journey That Started It All

During our honeymoon, we decided to travel across Thailand by car. We drove from the south of Phuket all the way to the very north of the country.

For one month we traveled slowly, camping in different locations and exploring the landscapes of Thailand.

One day in Chiang Mai we discovered a coffee that immediately caught our attention. We asked where it came from — and if it was possible to visit the farm.

That visit happened during the Songkran festival. We were in Pai at the time, waiting to be picked up by a 4x4 truck that would take us up the mountain. While waiting, everyone around us was playing with water as part of the Songkran celebration.

On the ride back down the mountain, people were still celebrating — throwing water as we passed through the villages. We sat in the back of the truck, getting soaked while laughing the whole way back.

Exploring Coffee Farms Around the World

Since that first experience in Thailand, we’ve made it a point to visit coffee farms whenever we travel.

We visited farms in Sumatra, Indonesia, and are currently exploring farms in Brazil as well.

Each place offers a new perspective on how coffee is grown, processed, and understood by the people who dedicate their lives to it.

Try to explore and analyze it blindly, on your own terms.

Only after that can you read the story behind the lot and discover how your impressions connect with the origin, process, and terroir.


Why “Not Just Coffee”

Coffee is a portal.

For most people, it’s simply a source of caffeine — but in truth, coffee is something far greater.

For me, it is a ritual of returning to myself and to my inner truth.

This product holds a concentrated form of energy: in every bean, in every sip — the labor of families, their hands, sweat, and life force, their care for the land.

My husband and I witnessed this with our own eyes when we stayed overnight on coffee farms. In Thailand, we shared meals at the same table with farmers and their families, slept in tents, walked through the mountains among the trees, and observed how coffee is harvested and processed.

This coffee carries the testimony of the journey from bean to cup.

The portal opens when you realize: this is Not Just Coffee.
